Recipe: Vegan Pumpkin Spice Muffins! 🍂


When I went vegan, a lot of people started questioning what I ate. 

"So you can't even eat cake and cookies?"

Actually, I can eat all of the sweets in the world! While outsiders think vegans have to buy fancy gluten free flours, non-GMO sweeteners and sugar extracted from some rare Peruvian plant, we actually bake just like everyone else.

When it comes down to it, vegan baking is a piece of cake. (Literally.) Aside from eggs and occasionally milk, most baking recipes require mostly plant-based ingredients. In addition, replacing eggs with applesauce or bananas is a much healthier (and much more delicious) alternative!

As much as I love eating spooky foods during autumn, a lot of my favorite places don't accommodate a plant-based diet. (Pssst. I'm talking to you, Disneyland!) So naturally, I thought I'd make pumpkin spice muffins that us vegans can enjoy!



Here's what you'll need:
2 cups gluten free all-purpose flour
2/3 cup of sugar (I used coconut, but it's up to you!)
1 1/2 tablespoons baking powder
1/2 teaspoon pumpkin pie spice
1 cup canned pumpkin purée
2/3 cup of sweetened cinnamon applesauce 
2 teaspoons vanilla extract
1/2 cup non-dairy milk
and of course, non dairy chocolate chips to mix in! 
Instructions:
1. Preheat your oven to 400 degrees F.
2. In a large bowl, combine all of your ingredients (dry first, then wet) and whisk together until combined.
3. Spoon the mixture into muffin liners and fill until it appears to be 2/3s full.
4. Bake for 15 - 20 minutes and enjoy!



I hope you enjoy these as much as I did. I usually prefer savory foods, but these muffins had me feeling some type of way!
